Herbed Flatbread

Description

A batter bread with herbs. Excellent for dipping or with Mediterranean-flavoured fry-ups.

Ingredients

  • 1 cup Flour
  • 0.125 teaspoons Salt
  • 0.5 cups Milk
  • 0.75 cups Water
  • 0.25 cups Butter
  • 0.25 teaspoons Basil
  • 0.25 teaspoons Rosemary
  • 0.125 teaspoons Thyme
  • 1 pinch Sage

Cooking Instructions

* Melt the butter. Seriously. Don't put it in cold.
* Put the liquids in the blender, including the warm butter, and blend.
* Add flour and blend some more.
* Add spices and blend until smooth.
* Preheat the griddle to 375F/190C
* Pour batter straight onto griddle. It's pretty runny, so be careful.
* When they stop bubbling and start to change colour, flip them.
* Cook about that long on the other side -- they should brown slightly.

Makes ~10. They should be thicker than dip-pan crepes, but thinner than pancakes. And they're greasy as fuck, so be careful what you touch after you handle them.

Yes, you can do this without a blender, but the blender makes way less of a mess than a mixing bowl, when you're pouring.
