I Can't Believe It's Not Hummus (Which No One Will Suspect)

Description

It's like hummus, but different. The title is a riff on the 13th century Al-Anadalus cookbook.

Ingredients

  • 2 tablespoons Lemon Juice
  • 1 tablespoon Garlic
  • 2 tablespoons Oil (Sesame)
  • 1 can Chickpeas
  • 0.5 cups Oil (olive)
  • 0.5 each Onions (White)

Cooking Instructions

I STRONGLY suggest using a food processor instead of a blender, just to cut down on the amount of scraping the shit off the side of the blender that has to be done while blending it.

* Put everything but the chickpeas in the food processor and blend until smooth.
* Add the chickpeas about 1/3 of a tin at a time and blend until more or less smooth.
** Depending on the size and shape of the device, you may need to scrape the stuff back into the bottom a few times.
** Depending on your patience and your food processor, this may end a bit lumpy. It's still good.
* Serve with flatbread or crisps. Sprinkle a bit of paprika or rosemary on top. Alternately, eat it with a fucking spoon.

If you don't have lemon juice, lime also works well. Any citrus would probably work, with some subtle differences in the flavour.
