Seitan Burgers

Adapted from


  • .25 cups Water
  • .25 teaspoons Salt
  • .5 teaspoons Thyme
  • 1 tablespoon Garlic (minced)
  • .25 cups Chickpeas
  • 1 tablespoon Tomato Paste
  • .5 teaspoons Cumin
  • .5 teaspoons Fennel
  • .5 teaspoons Paprika
  • 1 tablespoon Soy Sauce
  • .75 cups Wheat Gluten

Cooking Instructions

1. Roast or sautee the onion
2. Put everything but the water and the gluten into the food processor and blend the shit out of it.
3. Add the water. Blend until you've got a runny paste.
4. Add the gluten. Blend until you've got a roughly consistent glob of gunk.
5. Break the gunk in half and roll into two balls. Squish flat and wrap in foil.
6. Steam for 40m-1hr

For extra tasty goodness, consider stuffing the burgers with chile, cheese, and/or mushrooms.
