Pumpkin Muffins

Description

It's pumpkin bread.

Ingredients

  • 1/2c pumpkin puree
  • 1/4c whipping cream (you might be able to get away with unsweetened coconut cream)
  • 3T vegetable oil
  • 1c water
  • 1c flour
  • 1/4c sugar
  • 4tsp baking powder
  • 2T premixed 'apple pie spice' (apple pie spice and pumpkin pie spice are two different blends, but in this case, you might be able to get away with either. i prefer apple, though. store brand is probably okay, but you might want to use another 1/2tsp if it's weirdly cheap.)
  • 1tsp powdered ginger
  • 1/2tsp black pepper

Cooking Instructions

  1. Preheat oven to 180C/350F. Put paper muffin cups in a muffin pan.
  2. Mix the wet ingredients in a large bowl. Or mix them in the blender, but be ready to pour into a bowl, because it's a little too thick for the blender once the dry ingredients go in.
  3. Mix the dry ingredients in something else and slowly mix them into the wet ingredients, a little at a time. You should end up with something a bit thicker than cake batter.
  4. Pour the batter into the cups. Bake for 20-25 minutes. Test with a toothpick to make sure they're done
