1/4c whipping cream (you might be able to get away with
unsweetened coconut cream)
3T vegetable oil
1c water
1c flour
1/4c sugar
4tsp baking powder
2T premixed 'apple pie spice' (apple pie spice and pumpkin pie
spice are two different blends, but in this case, you might be
able to get away with either. i prefer apple, though. store
brand is probably okay, but you might want to use another 1/2tsp
if it's weirdly cheap.)
1tsp powdered ginger
1/2tsp black pepper
Cooking Instructions
Preheat oven to 180C/350F. Put paper muffin cups in a muffin pan.
Mix the wet ingredients in a large bowl. Or mix them in the
blender, but be ready to pour into a bowl, because it's a little
too thick for the blender once the dry ingredients go in.
Mix the dry ingredients in something else and slowly mix them
into the wet ingredients, a little at a time. You should end up
with something a bit thicker than cake batter.
Pour the batter into the cups. Bake for 20-25 minutes. Test with a
toothpick to make sure they're done
