Peperoni in Padella

Description

A Neapolitan dish of fried peppers with capers and olives

Ingredients

  • 5 Mixed peppers, both red and yellow
  • 1 tablespoon salted capers
  • 200 g black or green olives
  • 1tsp minced garlic
  • Extra virgin olive oil for frying
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon white wine vinegar

Cooking Instructions

  1. Slice the peppers into ribbons
  2. Heat a frying pan to medium-high, add oil, and put in the garlic, capers, and olives first
  3. When the garlic starts to change colour, add the peppers and stir to spread the oil over them. Cover the pan.
  4. Cook for about ten minutes, then add salt, pepper, and vinegar, mix well
  5. Cook uncovered until peppers are thoroughly cooked.
    If you're cooking this in advance, skip step 5, and freeze it at that point. It'll finish cooking when you reheat it.
