Vegetable Cheese Pie

Flaky crust, delicious cheese, honestly what's not to like?



  • 3c flour
  • 1/2c shortening
  • 1/2c butter
  • 1/2c water
  • 1T sugar
  • 1/2tsp salt


  • Broccoli, mushrooms, peppers, onions, enough to fill your pie tin and a little more because shrinking while cooking
  • 2c vegetable broth
  • 3T arrowroot or cornstarch
  • ehhh.... probably 1c shredded cheddar? more or less? a big handful

Cooking Instructions

  1. Preheat the oven to 180C/350F
  2. Put crust ingredients in a large bowl. Basically squeeze the stuff a bunch until it turns into an approximately smooth lump with fingernail-sized bits of butter in it. This should roll out to a double-crust. Powder the SHIT out of your rolling mat or countertop, because this crust is weirdly wet and it sticks like a bitch.
  3. Put veg in bottom crust. Put broth in a small pot and stir in arrowroot. Bring to a boil. When it starts to get lumpy, stir the shit out of it and add the cheese. Stir until quite thick, then pour into pie crust.
  4. Lid the pie, bake for 30m, then spray with oil and bake another 10.
