Description

It’s based on pasta e fagioli, and it’s, as my bestie just pointed out, the Italian version of chicken noodle soup – it’s what you cook for people sick in bed.

Ingredients

I’ll list the ingredients I used and, in parentheses, what’s SUPPOSED to go in this soup, so you get the proper version and this dirty hackjob at the same time.

  • 1/2c olive oil
  • 1 large onion, diced
  • 2T minced or crushed garlic
  • 3 parsnips (carrots), sliced
  • ~4 stalks celery with leaves, sliced
  • 2 roma tomatoes, diced
  • 1 tin cannellini
  • 1/2c uncooked rice (uncooked orzo)

Cooking Instructions

Throw all the ingredients in the crock pot with as much water as you can fit, and cook it on high until the rice or orzo is done. If you’re feeling fancy, put the oil, onion, and garlic in first and cook those until you can smell them before adding the rest. You should have a celery-and-onion-flavoured broth. Salt to taste and serve with grated parmesan.
