Description

It's stew. It's got chiles in it. Otherwise it bears no resemblance to traditional chile stew recipes.

Ingredients

  • 1 onion
  • 3 cloves garlic
  • 2-4T diced chile peppers
  • 3T oil
  • 4 small potatoes
  • 3 stalks celery
  • 2 parsnips
  • 4-6 mushrooms
  • 1/2c corn meal
  • 1/2c cheese
  • 1 tomato
  • 10c water?

Cooking Instructions

Put the oil in the crockpot and set it on high. Dice the onions and garlic first and put that in with the chile. Wait about ten minutes, and then work your way through the rest of the vegetables, except the tomato, putting them on top of the onions as you finish chopping them. Pour in the water. (I have no fucking idea how much water this actually is. I filled up the pot from my coffee maker and used that.) Leave it alone for at least two hours. Add corn meal. Ignore it for at least another half hour. Serve with shredded cheese and diced tomato on top.

Honestly, put in as much chile as you think it needs. I totally screwed myself because I trusted the label on the freezer bag of xx-hot green, and it is, in fact, like a medium. Maybe. Fortunately? Crockpot. I’mma throw in another chunk and have another bowl for breakfast.
