Ingredients

<ul><li>1/2 onion</li><li>~1c some kind of chopped veg (I've been using cabbage. Asparagus also works, as does Yet More Onion.)</li><li>1/4 tsp each of: thyme, mustard powder, smoked paprika, hot paprika, rosemary, coarse black pepper</li><li>1T oil</li><li>~1/3c water</li><li>1/2c vital wheat gluten</li></ul>

Cooking Instructions

<p>Put the veg, onion, spices, and oil in a frying pan and cook on high
until they start to brown. Push all that to the side and pour in the
water and immediately follow it with the gluten. Mix with a fork until
you don't see powder and shuffle the veg back in. Cook until the gluten
gets chewy and it browns at the bottom, and then scrape it and turn it a
bit. Do that three or four times, until it's about as brown as you tend
to like things. Start to finish about 10-12 minutes.</p><p>Fuck with
the seasonings in this. Please. I have a couple of particular sorts of
veggie sausage I like, and this is the spice blend from one of them.
Minus the veg, this is actually about half the recipe for a batch of
sausage -- it's short a few ingredients, but in context, it makes a
decent sausage crumble in like... a sixth the time it would take to even
make the sausage, never mind cooking it into something else. <s>What can I say, I'm a lazy asshole with a taste for high-protein foods.</s></p>
