Ingredients

<ul><li>1/2c pumpkin puree</li><li>1/4c whipping cream (you might be able to get away with
unsweetened coconut cream)<br>
</li><li>3T vegetable oil</li><li>1c water</li><li>1c flour</li><li>1/4c sugar</li><li>4tsp baking powder</li><li>2T premixed 'apple pie spice' (apple pie spice and pumpkin pie
spice are two different blends, but in this case, you might be
able to get away with either. i prefer apple, though. store
brand is probably okay, but you might want to use another 1/2tsp
if it's weirdly cheap.)<br>
</li><li>1tsp powdered ginger</li><li>1/2tsp black pepper</li></ul>

Cooking Instructions

<ol><li>Preheat oven to 180C/350F. Put paper muffin cups in a muffin pan.</li><li>Mix the wet ingredients in a large bowl. Or mix them in the
blender, but be ready to pour into a bowl, because it's a little
too thick for the blender once the dry ingredients go in.</li><li>Mix the dry ingredients in something else and slowly mix them
into the wet ingredients, a little at a time. You should end up
with something a bit thicker than cake batter.</li><li>
Pour the batter into the cups. Bake for 20-25 minutes. Test with a
toothpick to make sure they're done
