<ul><li>5 Mixed peppers, both red and yellow</li><li>1 tablespoon salted capers</li><li>200 g black or green olives</li><li>1tsp minced garlic<br></li><li>Extra virgin olive oil for frying<br></li><li>Salt to taste</li><li>Pepper to taste</li><li>1 tablespoon white wine vinegar</li></ul>
<ol><li>Slice the peppers into ribbons</li><li>Heat a frying pan to medium-high, add oil, and put in the garlic, capers, and olives first</li><li>When the garlic starts to change colour, add the peppers and stir to spread the oil over them. Cover the pan.<br></li><li>Cook for about ten minutes, then add salt, pepper, and vinegar, mix well</li><li>Cook uncovered until peppers are thoroughly cooked.<br>If you're cooking this in advance, skip step 5, and freeze it at that point. It'll finish cooking when you reheat it.<br></li></ol>
