Ingredients

<ul><li>2 thick slices of bread</li><li>2 potatoes, shredded and fried (potato pancakes will also work)<br></li><li>½ large tomato, diced</li><li>½ medium onion, slivered</li><li>3-4 brown mushrooms, sliced</li><li>1c white gravy</li><li>1/2c shredded cheese</li><li>4 slices bacon, however you like your bacon</li></ul>

Cooking Instructions

<p>Sauté onions and mushrooms in the leftover potato frying grease. Lightly toast the bread. Slather it with <i>half</i>
the gravy. Layer bacon, then potatoes, then veg, then more gravy, then
cheese. Melt cheese however suits. However tempted you may be to pick
this up like a slice of pizza, I strongly advise approaching it with a
fork, unless you are <i>dead sure </i>of the structural integrity of your bread.</p>
